     In Greece, avgotaraho is produced primarily from the flat-
     head mullet caught in Greek lagoons. The whole mature
     ovaries are removed from the fish, washed with water, salted
     with  natural  sea  salt,  dried  under  the  sun,  and  sealed  in
     melted wax.
